So Mother's Day came and went, and now Father's Day is next! I hope that didn't sound selfish but being waited on hand and foot is totallyappealing to me.

My ideal Father's Day is pretty much just hanging out somewhere and relaxing with the rest of the family, I dropped a hint about taking a drive up the coast and grabbing some lunch and a beer so fingers crossed!

If you prefer to stay home, Father's Day is the perfect time to be firing up your grill and diving into some awesomely tasty meat. I was thrilled when Omaha Steaks asked me to grill some of their juicy Private Reserve Lamb Rib Chops, and if you know me you'll know I love to get the kids involved in some way.

The two of them helped me prepare the lamb and even took charge of the grill, I know this is going to pay off big time in 10-15 years. Lamb has always been a huge favorite for my kids so they were so happy to be able to tear these chops apart after they were done.

Ingredients

  • For the mint sauce
  • 1 1/2 cups fresh mint leaves, thoroughly washed
  • 1/4 cup sugar
  • 1/2 cup water
  • 1/2 cup malt vinegar
  • For the lamb chops
  • 8 lamb rib chops
  • Olive oil
  • Salt and pepper

Instructions

  1. Make mint sauce
  2. Chop mint fine.
  3. Add to small saucepan with sugar and water.
  4. Bring to a boil, cook 1 minute, remove from heat stir in malt vinegar, and set aside to cool. (Can be kept in fridge for up to 1 month.)
  5. Make lamb chops
  6. Preheat grill to high.
  7. Rub olive oil onto both sides of lamb chops and season well with salt and pepper.
  8. Place chops on grill, reduce heat to medium, and cook 4-6 minutes on each side until done to your liking.
  9. Place on platter and allow to sit 10 minutes.
  10. Drizzle mint sauce over the top and serve.
